Ingredients

Meatballs

  • 450 grams chicken, cubed partially frozen
  • 1 egg
  • 50 grams almonds
  • 1 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp Garlic powder
  • 1 tablespoon parsley flakes

Sauce

  • 2 tablespoon olive oil
  • 1 cup cremini mushrooms, sliced
  • 1 onion
  • 1 cup Capsicums(Bell peppers), sliced
  • 2 cloves garlic
  • 115 grams white wine
  • 1-2 tablespoons Vegetable stock paste
  • 1/2 Cup water
  • 1 can chopped tomatoes
  • 1 tablespoon capers
  • 1 teaspoon dried oregano
  • 1 teaspoon Dried parsley

extras

  • 1-2 zucchini, spiralled
  • cheese, blitz to garnish

Recipe's preparation

  1. 1. 1. Place almonds in bowl – 8-10 sec speed 7 set aside.

    2. 2. Mince meat sp6 20sec

    3. 3. Add all meatball ingredients to bowl speed 3.5 30sec reverse or until all mixed through. Form meatballs and transfer to varoma trays.

    4. 4. Add garlic and onion to bowl chop 3sec sp7

    5. 5. Add oil and Sauté 3mins 120deg sp1 reverse

    6. 6. Add capsicum and sauté again 3mins 120 sp1 reverse

    7. 7. Add remaining sauce ingredients to bowl. Put varoma with meatballs on top with lid. Cook 20mins varoma speed 1 reverse.



    8. 8. Add meatballs to sauce 5mins 100deg mix speed reverse.

  2. Serve on top of zucchini pasta topped with cheese

Alter how you like - If you couldnt be bothered slicing the capsicum blitz first before sauteing tmrc_emoticons.)

I dont use mushrooms but original recipe was converted with mushrooms.
