Ingredients

Mash

  • 50 grams Parmesan cheese, (optional)
  • 700 grams potatoes or sweet potato, roughly chopped
  • 150 grams Milk, Use less milk for sweet potato, approx 120gm
  • 20 grams Butter

Cottage Pie

  • 100 grams Capsicum, red
  • 200 grams onions, quartered
  • 200 grams carrot, cut into large chunks
  • 100 grams Celery, roughly chopped
  • 100 grams zucchini, roughly chopped
  • 20 grams olive oil
  • 60 grams Butter, cubed
  • 45 grams plain flour
  • 1 level tsp curry powder, Use Clive of India, its a sweeter curry powder, if using Keens only use 1/4tsp
  • 200 grams tomato sauce
  • 30 grams Worcestershire sauce, (Lea & Perrins brand, others don't give the same flavour)
  • 15 grams soy sauce
  • 1-2 pinches Himalayan salt
  • 500 grams Beef mince

Recipe's preparation

  1. If using, grate parmesan 10 seconds, speed 8 and set aside in a bowl. Rinse the mixing bowl. Add sweet potato and chop 2sec speed 6. Insert butterfly then add milk and cook 25mins 95deg speed 1. Add butter and reserved cheese and mash 30sec speed 3. Set aside and rinse bowl.

    Add capsicum, onion, carrot, celery and zucchini to the bowl and chop 3 seconds speed 6. Scrape down the sides of the bowl and add the butter and oil. Cook 8 mins 100deg REV speed 1.

    Add plain flour, curry powder, tomato sauce, soy, worstershire, & salt . Mix 10sec speed 3 REV.

    Add mince (whole, don't break it up), submerging it under the sauce. Cook 9mins 100deg speed 1 REV. Mix 20-30 seconds speed 3 REV to break the mince up. Use a spatula to break it up further if required.


    Pour into a baking dish and top with the sweet potato and bake 180deg C for 30mins. It will become thicker (and less runny) on cooling.

Tip

The cottage pie will thicken once cooled. Its perfect for preparing ahead of time, or to freeze for a quick, healthy dinner.


This combination of veggies works really well, and they help to thicken the sauce. I've tried others, but these give the best flavour.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
