Ingredients
Crepe
- 230 grams water
- 230 grams Milk
- 2 eggs
- 130 grams flour
- 50 grams Butter
Sauce
- 100 grams Sausage Mince
- 1 clove garlic
- 400 gram can tomato puree
- 1 tbsp grated potato, to coounteract the acidity
Filling
- 680 grams riccotta
- 150 grams mozarella
- bunch parsley, fresh
- bunch basil,fresh
- 80 grams strong hard cheese cubed (Romano, Pecorino or Parmesan are ideal)
- 2 eggs

place all ingrediants in TM bowl
speed 4 for 15 seconds
let rest for 10 minutes
ladle batter into small frypan and make very thin. When sides seem dry use fingers to flip crepe.
put garlic in bowl and chop on speed 5 for 5 seconds. Scrape down
add oil, potato and mince and fry for 100 degrees 10 mins speed 1
season with salt and pepper
Add can of tomato puree. 15 minutes, 90 degrees, speed 1
romano and mozzeralla. 8 seconds, speed 7.
Add all other ingredients, mix on speed 5 for 20 seconds
Drizzleglass baking dish with a small amount of sauce
Place filling in crepes and roll. Place into dish folded side down. Place next to each other until dish is full.
Top with sauce. Garnish with basil and parmesan
Cook in oven for 1/2 hr on 200 degrees
