Ingredients

Roast Chicken & Stuffing

  • 1 Whole chicken, (1.6 - 1.8kg)
  • 1 onion, chopped in half
  • 1 apple, cored
  • 1-2 slices bread, torn into pieces
  • 1 tablespoon mixed herbs of your choice
  • 1-2 cloves of garlic
  • pinch salt
  • pinch black pepper, ground

Spice-Rub

  • 1/2 teaspoon smoked paprika
  • 1/4 tablespoon Ground Chilli
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 sprigs rosemary, or 1 tablespoon dried rosemary
  • olive oil

Recipe's preparation

    Roast Chicken
  1. 1. Rinse cavity of chicken and pat dry

    2. Prepare stuffing by placing onion, apple, bread, mixed herbs, garlic, salt & pepper into TM5.  Blitz on Turbo with MC in place 2 times for 1 second each.  Scrape down the sides and Turbo again a further 2 times.

    3. Insert stuffing into the cavity of the chicken and place the chicken into the varoma.

    4. Brush chicken all over with Olive Oil.

    5. Prepare spice rub by combining all remaining ingredients and rubbing into the skin of the chicken.   

    6. Place 1.5 litres of water into the Thermomix bowl. Place the chicken into the Varoma and place into position. Cook the chicken for 70 minutes / Varoma / speed 2.  ** See Tip

    7. For a golden brown skin, place the chicken into an oven preheated to 180C and roast for a further 20 minutes. Alternatively, leave to rest in Varoma for 10 minutes.

    Carve up & Enjoy with your favourite vegetables.

     

Tip

** You may need to cook for longer if your chicken is larger, or if it has been bought frozen and has not be completely thawed.  I found that 70 mins was perfect for a 1.8kg chicken that had not been frozen. 

Keep an eye on the water in the jug to ensure it does not get too low, this wasn't an issue when I did it but I have heard of others who have boiled the Thermomix dry.

    Chicken was cooked beautifully and was so moist! I sauteed the onions first in some butter, removed and allowed to cool. Then added the remainder of the stuffing mix, also added a stick of celery! I used 500mls of left over liquid, 30g flour and 1 Tbsp chicken stock paste for gravy, consistancy was great, not so thick and floury. Kept the remaining liquid and made a leek and broccoli soup the next day. Thanks for sharing such a great recipe. xx

    Thank you for the ideas to add vegies and make gravy. I used soy sauce to flavour gravy and the whole meal was beautiful... I must do meal again so thank you .

    This was absolutely delicious and the stuffing was unbelievably yummy! I added veggies in to steam at the same time and it made dinner so easy. I also used some of the water left in the bowl to add to gravy powder for a yummy gravy and kept the remaining water to use as chicken stock. Will definitely do this recipe again.

    Super easy and yum. 

     

    I didnt do stuffing but added cellery and herbs into the Bird. it was very moist and went very crispy skin in the oven. I also added 6 small potatoes peeled and halved into the basket at 40 mins to go and added them to the roasting pan.

    at 30 mins to go, i added carrots and pumpkin to the varoma with the chicken. These also went into the oven.

    made gravy with 500 mls of retained water, 50 g flour and salt to taste. 4 mins/90 degrees/ speed 3. nezt time will not add salt, but a dash or two of soy sauce for salt and colour.

    I made this recipe in the TM35 and used a 1.4kg chicken, it was delicious. I cooked it for 55min in the varoma and then 15min the oven to help golden it. I cooked some roast carrots an potato to go with it tmrc_emoticons.)
