- 500 g Asparugus spears
- 500 g water
- 50 g Parmesan cheese
- 4 spring onions
- 1 tsp thyme leaves
- 60 g cream
- 8 eggs
- 1 tbsp flour
- pinch Nutmeg
- freshly ground pepper, to taste
- 1 tsp TM31 Veg Stock Conc
- 2 tsp Olive Oil.
- 10 g Butter
- 50 g Feta or goat's cheese, crumbled

1. Snap woody ends from asparagus spears and discard, or peel and cut roughly.
2. Remove 4-5cm asparagus tips, then slice remaining stalks.
3. Place water into TM bowl, asparagus slices and spears into simmering basket and cook for 10 minutes/Varoma/speed 2.
4. Using spatula remove simmering basket, tip water out, rinse TM bowl with cold water and dry.
5. Place Parmesan cheese into TM bowl and grate 10 sec/speed 8.
6. Add roughly cut asparagus (if using), spring onions and thyme and chop 5-10 sec/speed 4-5 and scrape down.
7. Add cream, eggs, flour, nutmeg, pepper and TM Veg Stock Conc and whisk 10 sec/speed 4. Add asparagus slices, reserving tips.
8. Heat olive oil and butter in a 25cm frying pan and when hot pour in egg mixture.
9. Scatter over asparagus tips and crumbled feta or goat's cheese and cook over medium heat until egg starts to set.
10. Preheat grill and when edge is set, cook under grill until top is set and golden brown.

Very nice frittata. I added half a red capsicum & used purple onion as I didn't have spring onions. Yum! 5 stars!
