Ingredients
- 4 cobs corn
- 4 Rashers of Bacon, or 1 x 150g ALDI diced bacon
- 1 cup onion, chopped, (I prefer Spanish Red)
- 130 g self rasing flour
- 2 eggs
- 150 g Schlossgold Alkoholfreis Bier (from Woolies) or mineral water, (You can substitute milk, but I find the batter mixture much nicer with the beer or mineral water)
- 40 g grated cheese, feel free to omit
- 1 tsp baking powder
- 2 teaspoons basil / flat leaf parsley / thyme / oregani
- pinch sea salt and black pepper

Steam Corn for 20 minutes, Varoma Temp, speed 2 using 600g water in bowl
Add chopped bacon and onion to top tray at 12 minutes
Empty water and cool corn, remove from cob
Combine all other ingredients (except corn, bacon and onion) in bowl, speed 4-5 for 15-20 seconds (scrape down sides with spatula if required)
Add in bacon and onion and corn, speed 4 for 3-5 seconds, then "Counter-clockwise operation" Reverse for 5 seconds.
(Ensure mix is thoroughly mixed, but corn and bacon are still visible)
Place 2-3 tablespoons of the mixture in a hot, greased frying pan or on a hot, bbq plate, cook for 3 minutes each side or until golden brown.

Notes
This serves my family of 4. I have doubled the mix before, or also added 1 grated zucchini, 1 grated carrot and small handful spinach, plus some chives to the mixture to make it go further and hide a few extra veges in there. Serve with salad

These are tasty, but am I doing something wrong as whilst there golden brown on the outside, they are undercooked on the inside. Any suggestions?

Definitely 5 stars, very versatile to add in any old veges too. The first thing I did was chop up the onion and bacon on speed 4 for 5 seconds (I avoid any chopping ever since getting my thermie) and then set aside. I didn't bother cleaning the bowl before adding the water. Thanks for a great recipe, yum.
These were great! I added zucchini, fresh basil and chives. Very easy, thanks for sharing.
Delicious recipe, I added zucchini and carrot too, and served the fritters with smoked salmon, haloumi and rocket with a squeeze of lemon for a fancier meal.
Tasty, didn't have bacon so didn't use. Added fresh basil, parsley, oregano and thyme from my garden and added some chilli flakes. I used spelt white flour and mineral water. I added the cheese - a grated mozzerella. I popped them into fry pan as small (one tablespoon) fritters - easier to flip that way!
