- 2000 grams very ripe, red tomatoes
- 1 teaspoon rock salt

Put the tomatoes into the Thermomix bowl; you may need to quarter them, or chop half before adding more.
Chop for 10-30 seconds on speed 6.
Add salt and oil
Cook for 40 minutes at Varoma temperature on speed 1. Leave measuring cup in place to avoid splatter.
Turn speed slowly up to 6, then build up to 9. Pulverise for a minute.
Scrape the mixture from the sides down into the bowl, then cook for another 40 minutes as above.
If your tomatos are especially juicy you may need to repeat steps 4 and 5 until the tomato paste is the consistency and colour you prefer.
To ensure your paste keeps as long as possible we need to sterelise the paste.
Clean a preserving jar (I use an old jam jar) with boiling water and dry thoroughly. This can be done in advance so it is dry when you are ready,
fill with your paste and close tightly.
Submerge the jar in a pot of water and bring to the boil.
Boil for 10 minutes then remove from the pot.
Allow the jar to cool. You should hear a pop as the jar cools. If you don't - check the seal indicator on the top of the lid if the indicator is depressed - you have successfully sterilized your paste.
Tip
It takes about 2kgs of tomatoes to get a jar of tomato paste.
Check out your local growers market to get tomatos bulk. Unless you are growing your own, or buying cheap it is cheaper to buy the sauce.

try placing the steaming basket ontop of the lid rather than the measuring cup. I always make 2kg and have never had this happen.
I freeze it in an ice cube tray in 1 tsp in each cube (approx 5g) then transfer to a zip lock bag once frozen. I then use what I need in a recipe.
Can this be frozen?
New to Thermomix just got my TM5 today and just made this tomato paste. Looks great. Tomatos are really cheap at the moment and I wanted to make more. Has anyone frozen this? If so how did it go?
I've made this twice now, the first time with 1.5kg of tomatoes out of the garden, cooked for the 2 x 40 minutes but it was slightly burnt so this time I have cooked for the first 40 mins amd the. Only for 15 minutes the second time. However I only had just over 1kg of tomatoes.

Tomatoes in season and got 2 kg for $2/kg at our fortnightly Growers Markets. I made this from an almost identical recipe which did use 1.5kg tomatoes and 1 tbsp sugar. I cooked it down twice and very happy with the outcome. I have a TM5. I got approx 4x 175grm tubs from this batch. I put the basket instead of the MC and worked v well.
Just bough another 2kg and guess what I'm making tomorrow?
Made this this week and had major overflow! I left the kitchen and came back to tomato all over the bench and it's stained my Thermomix. My suggestion is to reduce the volume to 1.5kg. Great paste though!
