Ingredients
Jam / Sauce
- peanut oil
- 2 tablespoon tomato sauce
- 2 tablespoon Sweet chilli sauce
- 5 tablespoon hoisin sauce
- 1 tablespoon Minced garlic
- 1.5 tablespoon Minced Ginger
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 punnets cherry tomatoes
- 10 shallots, peeled, (Brown onions are OK but not as good)
- 6 long red chillies deseeded
- 6 long green chillies deseeded
- 2 bunches coriander, (No roots)
- 2 tablespoon palm sugar, grated

Place deseeded Chillies into the Thermomix, place MC on chop Sp 5 / 5 sec. Set aside the chopped chillies in another bowl.
Add Cherry Tomatoes & peeled shallots into the Thermomix, place MC on chop Sp 5 / 5 sec. Repeat if neccessary. Set aside in another bowl.
Grate 1‐2 tablespoons of palm sugar and add to the tomato mixture. Rinse the jug
Chop the coriander and place in a seperate container
Heat up peanut oil (about 1‐2mm on the bottom of jug) at 3 Min / Varoma / "Gentle stir setting" (You'll hear the oil bubbling) MC OFF
Add 1 tablespoon of minced garlic & 1.5 tablespoons of minced ginger to hot oil. Garlic & ginger should start browning instantly. 2 min / varoma / sp1. MC OFF
Add 1/2 of the chopped chillies, 1 min / Sp1
Add tomatoes & shallots, 15 sec / sp3
Add 2 tablespoons tomato sauce, 2 tablespoons of sweet chilli sauce and 5 tablespoons of hoisin sauce. Season with Salt and Pepper
Place steaming basket on top of lid, 20 Minutes / Varoma / Sp1
In a seperate large bowl, add remainder of chilli and coriander then add tomato base and stir to combine.
Wait for the sauce / jam to cool and enjoy.
We love to have fresh crusty bread with butter, the jam on top and fresh crab. Would also be good with Crayfish or tossed through steamed mussels.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
