  • 2 clovesof garlic
  • 2 teaspoons cumin
  • 50-90 ml lemon juice (according to taste)
  • 50 ml olive oil
  • Parsley to garnish
  • 50 ml water/ice
  • Salt and pepper

Recipe's preparation

  1. Place garlic in TM and chop for 5 secs on speed 7.

    Add all other ingredients and mix for up to 1 min on speed 4 .

    The flavour should be sharp - lots of garlic, lemon, salt and pepper. The cumin adds warmth that balances very well with the olive oil

    Serve in flat platter garnished with sprigs of parley and a dribble of olive oil.

    Accompany with warmed pita bread to dip in.

    Good flavours. I will reduce the water next time by half. Added 45 lemon juice, 60 water (over poured!) and 45ml oil.

    Lovely flavour, but too sloppy for my taste, even though I left out the water.  I added about 75 ml of lemon juice, but would reduce this next time to improve the texture.  I boosted the lemony taste with lemon zest.
