Ingredients

Sauce: makes approx 500 ml

  • 1 small onion
  • 4 cloves garlic
  • 2 stalks celery, (or 1 large stalk)
  • 1 flat mushroom
  • 1/2 red capsicum
  • 1 Medium Carrot
  • 1/2 heaped tsp marjoram, dried
  • 1/2 heaped tsp oregano, dried
  • 800-850 g fresh tomatoes, (weight is skinned and cored weight)

Recipe's preparation

  1. Place tomatoes into a bowl of boiling water, to remove skins. Then core tomatoes, roughly chop and set aside.

    Roughly chop onion, garlic, celery, mushroom, capsicum and carrot and place in TM bowl. Chop vege mixture 10 secs / sp 5.

    Scrape down bowl with the spatula.

    Add reserved tomatoes (skinned and cored), and dried herbs. Chop 10 secs / sp 5.

    Scrape down bowl with the spatula.

    Replace TM lid, remove MC and place simmering bowl on top of lid.

    Cook 60 mins / 100C / sp 2 to cook and reduce. Keep an eye on sauce, as length of cooking will depend on how ripe/juicy tomatoes are.

    Once reduced to consistency desired, blend 30 sec / start speed 6 and increase speed to 10.

Tip

Great pizza sauce for children as full of hidden vege goodness!! This sauce doesn't contain any added salt or sugar ... season or sweeten as desired to suite your taste buds.

The sauce isn't a bright red sauce, but as a pizza sauce, it can be hidden under pizza toppings, or alternatively add tomato paste to increase redness if desired.

Sauce can be kept in the refrigerator or frozen in small containers, ready for pizza making!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
