- 800 g Roma (low acid) tomatoes
- 100 g tomato paste
- 100 g raw sugar
- 100 g malt vinegar
- 1 tablespoon himalayan or rock salt
- 1/4 teaspoon ground allspice
- 1 teaspoon dried onion flakes

Add all ingredients to the TM bowl and chop for 10 secs/speed 7. Scrape down sides of mixing bowl with spatula.
Replace lid, remove MC and place simmering basket over lid to reduce splatter. Cook 50 mins/100deg/speed 2.
Blend 1 min/speed 6-10, increasing speed gradually.
Tip sauce into metal sieve, and push through with spatula to make extra smooth sauce.
Bottle in hot sterilized bottle or jars.

If you want a spicy tomato sauce, add 1/8 teaspoon of cayenne pepper when adding the other spices

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

What a fantastic recipe!! So delicious!! I'm going to try reducing the sugar slightly next time but this is already less than commercial sauces!!
