Mango and Ginger Jam
- 40 grams ginger knob, Peeled & roughly chopped
- 80 grams Glacé ginger
- 50 grams lemon juice
- 1000 grams Mango pieces
- 800 grams raw sugar

Describe the preparation steps of your recipe
Blitz ginger 7 sec speed 9
scrape down sides of bowl with spatula,
add glacé ginger and chop 5 sec speed 7,
add mango, lemon juice and sugar.
cook on Varoma for 30 mins speed 1 with Varoma in place to prevent splashes and to sterilise jars while jam is cooking.
Check after 30 minutes, if not set cook another 5 minutes.
Carefully pour into sterilised jars, screw on lids and allow to cool.
Method
Tip
Sterilise the jars for 10 minutes in the Varoma, but leave the Varoma in place to prevent splashes.

Thanks for a great recipe! I made this today & entered it in our local Easter Show. I added more fresh ginger & crystallised ginger too as others have said, but only cause I love ginger so much. Easy, beautiful, tasty recipe that I'll be making again & again!

Turned out beautifully. Added 520gms sugar & 100gms glacé ginger as like extra ginger flavour. Also used some frozen mango combined with fresh mango. Yummo.
Made this with some frozen mango I had in the freezer. Only used about 600g of sugar and would probably cut it back to 500g next time as the mango is very sweet. Because I love ginger I’d probably add a bit extra. Was very nice 👍 .
Yum! I made for xmas gifts and replaced half the sugar with green apple. Have made it again and cut the sugar back further adding more apple again. Delicious!
