Ingredients
you will need:
- 200 grams fresh mango flesh
- 75 grams glucose syrup
- 200 grams plain sweet biscuits
- 75 grams Butter
- 500 grams Philadelphia cream cheese
- 180 grams Caster Sugar (or milled from raw)
- 1 teaspoon finely grated orange rind
- 2 teaspoons Gelatine powder, dissolved in 1/4 c boiling water
- 220 grams white chocolate
- 250 grams cream

Break the biscuits into the TM bowl, pulse for 10 sec or until fine, pour into a bowl.
Melt the butter at 60 degrees 1 min sp 4 or until melted.
Add biscuit crumbs to butter and mix 10 sec sp 4. Press into a lined 23cm spring form tin and set aside. Clean bowl.
Place mango in the TM bowl 5 sec sp 5, add glucose syrup cook for 15 mins at 80 degrees sp 4. should be slightly thickened. Pour into a bowl and allow to cool. Clean the bowl.
Melt the white chocolate at 60 degrees 1 min speed 4 or until smooth, pour into a dish and put in Thermomix server until needed.
No need to clean the bowl, but when it is cool add the creamed cheese, sugar & grated orange rind, 1 min sp 5 until smooth.
Add in dissolved gelatine, cream & chocolate. Mix 1 min sp 4.
Pour into prepared tin. Spoon mango syrup over top and using a knife, swirl into cheesecake mix, but not too much.
Refrigerate for 3 or 4 hours.
Decorate with more fresh mango strips if desired. Enjoy!

Delicious! I found the white chocolate harden during the process which made for lovely slight white chocolate chunks throughout the cake 😋
Absolutely delicious! Not too sweet, a big hit at our family lunch today. I followed the recipe exactly, although next time I might use lime instead of orange zest.

I have made this a few times and each has been a winner. I love the original but have also added extra mango into the cheese mix to give it extra mango flavour. Thanks for sharing such a delicious recipe.
My husband doesn't like cheesecake but he enjoyed this, more chocolate and topping, raspberry a on top. Yum
