- 400ml pure cream
- 1 litre iced water
- 3 tablespoons Maple syrup

Heat oven to 200 degrees celcius.
Place bacon onto unlined baking tray and cook untill fat has rendered and bacon is really crisp.
Insert butterfly and pour cream into Thermomix bowl. Mix on speed 4 for one minute. Continue to mix until the thermomix starts to shake and the buttermilk is splattering.
Remove the butterfly, press the basket into the TM jug and tip to pour off the buttermilk.
Add 500g of iced water, mix on speed 4 for three seconds. Using the basket pour off the liquid and repeat once more.

Place the crispy bacon into the thermomix bowl (no need to clean the bowl) and chop for approximately five seconds on speed 5, untill the bacon is coarsely ground.
Return the butter to the bowl and add the maple syrup. Mix on speed 4 for approximately five seconds or until combined.
Method
Tip
-For extra bacon-y goodness scrape the bacon fat from the tray and add at the last step.
-This is REALLY good on pancakes.
