Ingredients
- 1 apple, quartered & cores removed
- 1 large onion, quartered
- 1 red chilli, seeds removed
- 800 grams nectarines, stones removed & coarsely chopped (I don't peel)
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 1 cinnamon stick
- 1 teaspoon sea salt
- 375 grams brown sugar
- 375 grams Cider Vinegar

Put Apple, onion and chilli in bowl and chop for 5 seconds on Speed 5.
Add remaining ingredients. Remove MC and put simmering basket on top of Thermomix lid instead. Cook on Varoma temperature, Reverse, Speed 1 for 40 minutes (or until chutney is thick).
Remove cinnamon stick and pour into clean, steralised jars and seal. Chutney will last over a year.
Tip
This chutney is great on a cheese platter, with cold meats, in sandwiches or with some lemon juice and oil added for a great salad dressing. A great gift!

My seal ring still has a bit of the smell of the chutney on it months later, even after soaking in lemon juice and bi carb - but it isn't affecting other recipes at all. Will do again!

Delicious! Used peaches instead and subbed the cider vinegar out for white wine vinegar. Only used 300g of that and 300g sugar. Definitely will make again. Thanks for sharing!

OMG, this is delicious, thank you so much Gabrielle. I made it to this recipe but added 2 chillies as I like a bit of a bite. A great recipe to use the nectarines in my fridge that were not worthy of eating but didn't need to be tossed either!
I have also substituted the nectarines to peaches, and loved it! Also had a bit of the boiling over issue, but used the Steamer basket, which helped prevent too much mess.
Also used the chutney to stir into plain steam vegetables to give a nice flavour, and also as a bit of a marinade for chicken.
