Oven Tomato Paste

  • 10 tomatoes, 1 kg approx
  • 3 garlic cloves
  • 2 onions, chopped
  • 1 sprigs fresh rosemary, leaves only
  • 1 sprigs fresh thyme, leaves only
  • 2 tablespoons olive oil, drizzle

Recipe's preparation

  1. This is a good way to use all the last tomatoes on the vine,the over-ripe ones and the not-so-perfect.
  2. Place all the tomatoes on a big baking tray. Add some garlic cloves & the chopped onions. You could add red peppers too if you have some. Add some rosemary, thyme or bay.
  3. Liberally drizzle with olive oil.
  4. Roast in a medium oven, stirring occasionally. When soft and collapsing, blitz to a smooth paste in the Thermomix. You can force the paste through a sieve to remove any twiggy bits if needed.
  5. Freeze this concentrated tomato in small portions & use to add to sauces, stews, soups, pizzza!
