- 1 Cob loaf
- 2 250g packets frozen spinach (thawed)
- 1 30g packet Spring Vegetable soup
- 1 cup of mayonaise
- 1 cup of light sour cream
- 4 spring onions, roughly chopped
- 1 small can water chestnuts

Preheat oven to 180deg C. Slice the top off the cob loaf, hollow out the loaf and cut the bread and 'lid' that has been removed into 3 cm squares (I just pulled mine out in chunks). Place squares/chunks of bread on an oven tray and cook in oven for 5-10 minutes or until toasted.
Add all other ingredients to the bowl. Mix on speed 4-5 for a few minutes or until well combined (if possible do the day before to let the flavours develop).
Place the mixture into the hollowed out cob loaf and serve with the bread (you will probably need some more bread/crackers/crudites as well).

I used 1/2 onion instead of spring onions and only used 250g spinach and added 1 packet of cream cheese. Delicious!
decided to whipp this up for our end of year party with tafe. i didnt have any mayo so just added a cup of water. and didnt have any spring onions haha.
it still tastes amazing!! leaving it over night in a container. and buying two cob loafs of my way to work in the morning. wont be toasting the bread but im sure it will still be just as good
Yummmmm! This is just delicious! We've tried it warmed in the oven and it was nice warmed too. I didn't have any veg soup/stock so I threw in half a packet of French onion soup and it tasted lovely. Last time I used light mayo and it wasn't nearly as yummy - gotta be the real deal
Good idea about the veggie concentrate, I hadn't thought of that and what a great way to take out the store bought stuff
Loved this recipe. made it on the weekend for an afternoon tea and everyone wanted the recipe! YUM.
Only change i made was used 1Tbsp of TM vegetable stock instead of the soup mix.

Delicious!! This was my first attempt at a cob loaf and everyone loved it! My sister-in-law suggested making the mixture and adding it into the cob loaf and then putting the entire thing in the oven so it crisps the bread and warms the dip at the same time. I think it would be yummy warm too. Thank you!!
