I'm cooking this todayRecipe's preparation
1. Cube your block of butter up and let it come to room temperature, soft enough that it squishes when you push on it.
2. Add your butterfly into the mixing bowl.
3. Weigh all ingredients into the mixing bowl.
4. Mix on speed 3 or 4 until combined smoothly, usually between 1-2mins.
5. Pour into containers and refridgerate or freeze.
Tip
Recipe can be doubled. I often do 500g of each ingredient.
Freezes very well. Put a couple of tubs in the freezer and leave one in the fridge.
Keep your old spreadable butter containers to fool everyone haha.
Use a light tasting oil. EXTRA VIRGIN OLIVE OIL does NOT work. Grapeseed or rice bran are good cheap choices. Or macadamia/avocado for more expensive. I use the Moro brand of light olive oil, as it is tasteless and great for other things like mayo and sweet baking.***ORIGINAL RECIPE taken from www.quirkycooking.com.au

I've just made this, used Moro light olive oil as suggested and only added 200g of oil and water. I've put in the fridge to set firmer but taste very oily. Hope the oily taste subsides in the fridge.
unfortunately the taste of the oil is too overpowering.
Have made this a few times now and turns out well! Hubby doesn't love the water in it, so we now halve the amount of water, and we use MCT oil which doesn't give a flavour to the butter
Thank you for suggesting Moro Light, I'd been looking for alternatives to seed/vegetable oils for a neutral flavour and this was good in a mayonnaise too.

I made this first go using light olive oil and unsalted butter (mistakenly). The oil taste was very overpowering and quite unpleasant.
Second attempt I used rice bran oil (and salted butter!) and it turned out great! I did also reduce the water to 180ml.
2nd time maker of this - first time, i didn't use as much water and this time i did the thirds - however, will definitely use less water next time. Make it as we need it Thanks!
Really happy with this recipe. About to make some for the second time. I use grape seed oil. Saving a lot of money!
Thanks for posting but my family weren’t keen on this one. We found it a bit “watered down”. Might try it again at some stage but cut down on the water.
It’s a MUST HAVE in our house.
