Recipe's preparation

  1. Fill glass or jar with oil and chill in freezer for at least half an hour

  2. Place vinegar and agar agar into bowl

    Cook 100 deg, speed 2 for 2 min until boils

    Pour into small bowl, allow to cool 5 min then draw up into syringe or pipette

    Dribble mixture slowly and evenly into cold oil to form pearls - do not overcrowd or warm up the oil - may take several batches (see pic - shown sideways)

    Remove the pearls using slotted spoon and rinse in cold water bath

    Drain and use

Tip

HINTS:

*Make sure your oil is cold and your mixture cool to allow the pearls to gel and set before they hit the bottom of the glass - otherwise they will stick together or have flat spots

*Experiment with the height you drip from to get the perfect size and shape - you dont want the drop to splatter when it hits the oil

*Can be made well before hand and stored for at least a week in the fridge with a dribble of balsamic to keep them moist

*Try them on fresh strawberries, or as an alternative way to dress your salad! Shown here on sliced mozzarella and tomato as a simple canape with olive oil dust and rocket spagetti - see other recipes
