- 50 grams olive oil
- 50 grams balsamic vinegar
- 75 grams Coconut sugar, or brown sugar
- 650 grams onions, selection of red, brown and spring onions

1. Cut onions into quarters and if using spring onions cut into 3cm lengths place into TM bowl and grate 4 sec/speed 5.
2. Scrape down sides of bowl using your spatuala add olive oil and balsamic vinegar. Cook for 30min/Varoma/"Counter-clockwise operation" Speed 2 placing simmering basket instead of MC.
3. Scrape down sides of bowl, add 75 grams of sugar and cook for 5 min/Varoma/"Counter-clockwise operation" Speed 2 placing simmering basket instead of MC.
4. Spoon into a container for later use.
Caramelised Onion - 300grams
Tip
Caramelised Onion can be sweetened naturally by using all red onions.
Great for side dishes or fillers in Milcaos.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Very easy to make and so tasty on our kransky hot dogs. I used all red onions and reduced the sugar as suggesfed. Perfect
Just so yummy. I had an oversupply of onions, so made up four batches of this last night. I ran out of 'normal' balsamic for the last batch and used raspberry infused balsamic...amazing! I reduced the sugar in all batches to 50g but easily could reduce it further. Thank you for such an easy peasy but totally delicious recipe. Christmas hamper must have I think.
So easy & tasty and agree just slice onion & reduce sugar to half - you can also try adding bacon bits and/or a dash of maple syrup or caremalised balsamic vinegar for extra flavour
Super easy and so delicious. Cooks down to approximately 1.5 to 2 cups. I used all red onions which I thickly sliced as per previous comment and cut back a little on the sugar. Tastes amazing dollopped on hot homemade pizza or accompanied with a good steak. Will definitely try a double mix next time. Warning: open all your windows while cooking!

Great recipe. Lovely on Steak Sandwiches. After reading the comments I halved the sugar and used all red onions. The sweetness was just right and delicious.
Hi Larisa, I'm not sure if anyone has answered your question yet, but just in case ... no, all the cooking is done in the TM bowl. The "Varoma" mentioned in the recipe is the cooking temperature. Hope this helps
Hello everybody! I am new to Thermomix but not new in the kitchen
So I have this question - do I transfer onions from TM bowl into Varoma simmering busket at some point?
We always make this -delicious but we don't put as much sugar
