Ingredients

Ham & Cheese Filling

  • 2 onions quartered
  • 2 garlic cloves
  • 250 grams capiscum, quartered, combination of coloured
  • 50 grams tomato paste
  • 45 grams olive oil
  • 1 tablespoon vegetable stock
  • 380 grams thinly sliced ham
  • 40 grams grated cheese

Pastry

  • 450 grams bakers flour
  • 120 grams water
  • 50 grams white wine, alcohol
  • 50 grams olive oil
  • 50 grams Butter
  • 1 teaspoon Yeast, dry
  • 1 teaspoon fine salt
  • 1 teaspoon raw sugar
  • 1 egg slightly beaten, for brushing

Recipe's preparation

    Ham & Cheese Filling
  1. 1. Place all ingredients except ham & cheese into mixing bowl and chop 6 seconds/ speed 4 scrape down sides of bowl.

    2. Saute 4 minutes/100 degrees/speed 1.

    3. Spread mixture onto tray and leave to cool completely before using in Empanada.

    4. Cut ham into thin slices and mix into mixture.

    5. sprinkle cheese over mixture when mixture has cooled.

  3. 1. Add water, yeast, sugar, wine and butter into mixing bowl 2 minutes/ 37 degrees/ speed 2.

    2. Add remaining ingredients except for egg and knead 2 minutes Dough mode"Dough mode" .

    3.  Pre-heat oven to 180 degrees.

    4.Place dough onto thermomat and divide into 6 even balls (120grams). Flatten each ball using a rolling pin into thin bases (approximately 200mm diameter, 4mm thick).

    5. Use approximately 160grams of filling and place on one side of each of the pastries leaving a 1cm edge around the edge.

    6. Fold side clear of mixture over to meet edge of filled side and seal edge by pinching or use of fork.

    7. Brush Empanadas with egg.

    8. Bake Empanadas for 25-30 minutes or until golden in colour.

Tip

1. Vary meat & cheese filling keeping to weight. E.g. Pepperoni, Baccon, Silverside, Salmon, Tuna or Vegetables.

2. Vary size of Empanada: large - meal size, medium - side dish, small - snack.

    Used pastry recipe only, the family loved it.
    Divided into 8 portions which seemed like a perfect size for us (1 per primary school aged child was enough).
    Used leftover chicken curry/boiled egg/shredded pizza cheese as filling.
    Brushed water around edge before pinching together using flat end of knife.
    Cooked sitting with pinched edge upwards.
    Excellent dough, restaurant quality, very easy, will do again.
