Ingredients

Fritter mix

  • 1000 grams pea eggplants, Pear
  • 100 grams Hard cheese mild, Pecorino kefaloteri haloumi grated
  • 1 large egg
  • Half level teaspoon baking powder
  • Half bunch parsley leaf, Chopped
  • 1 small onion, Chopped roughly
  • 1 garlic clove
  • 1 cup fresh breadcrumbs
  • Fine breadcrumbs, For coating
  • Olive or vegetable oil, For frying
  • salt and peper to taste

    Fritters
  1. Grate cheese of choice and set aside. Make fresh breadcrumbs by blitzing frozen bread(broken into few pieces) for1 to 2 seconds.set aside with cheese.Spread out eggplant on a tray and place under grill.Turn frequently until skin is blackened and flesh is soft.halve the eggplants and scoop out flesh. Meanwhile chop onion garlic and parsley 5-6 seconds on speed 6,scrape down sides if necessary and chop another second or so.set aside. Add eggplant to bowl and blitz for 15 seconds until it is puréed.Add cheese egg baking powder salt and pepper and onion mix. Stir on low speed2-3 for ten seconds. Turn out into a bowl and add enough of the fresh breadcrumbs to form a soft pliable mixture. You could add some quinoa if you liked, just reduce the amount of bread. Place in refridgerator for about an hour to chill. Form mixture into patties and gently roll in fine breadcrumbs Flour could be used as an alternative. Shallow fry in oil until golden on both sides and drain on paper towels. May be served hot or at room temperature. Tzatziki is a nice accompiament.

Tip

Other fresh herbs could be added such as basil or dill. Makes a nice Sunday supper dish serve with crustyd bread tzatziki and a Greek salad.
