Robyn's Veggie Rissotto

  • 40 grams Parmesan cheese
  • 1 --- zuchinni, roughly chop
  • 2 --- tomatoes, rougly chop
  • 1/2 --- Brocolli, roughly chop
  • 1 jar Corn
  • 3 cloves garlic
  • 1 --- carrot, roughly chopped
  • 1 --- onion
  • 30 grams olive oil
  • 40 grams Butter
  • 320 grams arborio rice
  • 60 grams white wine
  • 720 grams water
  • 2 tsp Vegetable stock paste
  • to taste salt

Recipe's preparation

  1. Grate Parmesan Cheese 10 sec sp 10, set aside

    Place vegetables cut to medium size into bowl & chop 10 sec on sp 4, scrape down sides of bowl and add Oil & Butter. Cook for 4 mins Veroma temp sp 1 Counter-clockwise operation

    Insert butterfly & add Rice & Wine cook for 3 min Veroma sp 1 Counter-clockwise operation Without measuring cup

    Add Water & Stock stiring the bottom to loosen

    Cook for 13 min 100 deg sp 1.5 Counter-clockwise operation without measuring cup and put basket on top of the lid. Note: check rice to ensure cooked maybe need a little longer

    Once cooked sprinkle reserved Parmesan Cheese and let sit for 5 mins before serving

Tip

Really you can use any vegetables I just looked in my fridge to what I had

    I didn't realise on time this was for the TM5 and added water to the max level and turned out really well.

    It is very delicious!

    the recipe turned out well. I amended as making for my 8 month old - added stock instead of wine and added a packet of spring veg soup and used chicken stock cubes instead of thermie veg stock (as ran out). Also used carrot, onion and tomato and turrned out very yummy, thanks tmrc_emoticons.-)

    The risotto turned out well and made quite a lot - we got 3 meals for 2 people out of it. My husband had his with first chicken then ham on the side and said it went well. Easy to make. It was a bit bland for us so we will probably add more stock paste next time. Thank you for the recipe.
