Ingredients
Batter
- 120 grams Cheese cubed
- handful Green beans, trimmed
- 3 Fresh Corn on the Cob
- 3 eggs
- 100 grams Milk of your choice
- 130 grams Gluten free plain flour, I use White Wings
- 1 tsp GF baking powder
- caramalised onions, totally optional!

Weigh cheese into bowl and add beans.
Chop on speed 5/6 for 4-5 seconds
Take the corn off the cob with a sharp knife and add to the bowl
Weigh other ingredients into the bowl
Mix speed 4 for 30 seconds
Heat a frypan and make fritta's/pikelets/mini pancakes flipping when brown on one side.
Serve with a salad for an easy lunch or with bacon and avocado for lunch or breakfast!
Add other veges - carrot, zuchinni, pumpkin as you wish. You could add ham/bacon/chicken... what ever needs using up basically!
To make batter
Tip
you could possibly bake these into muffins or a slice, the possibilities are limitless!
