Soup
- 3 Whole Carrots, Peeled - cut into smallish chunks
- 1/2 Butternut Squash, Peeled - cut into smallish chunks. Or one bag of ready chopped.
- 1/4 Red or White Onion, Cut into smallish chunks
- 1 cube Chicken OXO
- 190 g Boiling water
- salt and pepper to taste
- 50 g Low Fat Soft Cheese

Slightly soften the squash in a microwave if you feel necessary
Grind carrot, butternut and onion in TMix on speed 4-5 until all finely chopped – you’ll hear when it’s ready
Scrape down sides of bowl. Dissolve OXO cube in 190g/ml boiling water. Add to chopped veg with salt and pepper to taste. Cook 15min/100°/Spd 3
Scrape down sides of bowl. Add 50g low fat soft cheese. Puree 1min/Spd 9
Keep the measuring cup on at all times. It gets hot and you don't want it to splash out!
Enjoy! (If you're entertaining guests, once bowled - garnish with half a tablespoon of creme fraiche or double cream and sprinkles of crispy bacon!)

Tip
This is just 2 Weightwatchers points if you eat it all! A welcome warmth on a cold day! If you'd rather this be 0 points - simply omit the soft cheese! You'll still have to puree for 1 min though - that's what creates the perfect smoothness!
Suitable for freezing. Simply defrost and re-heat in microwave or on hob.

Perfect consistency, I added a touch of honey as have a sweet tooth.
Awesome, tasty and super smooth! I used Fetta instead of other cheeses and it added a nice texture to it.
This is a nice version of changing up pumpkin soup. We added a bit more water (250g in total) to help stretch to feed 3 people. It was lovely but i found it very thick, next i make it 500g of water so that it's not as thick and i use cream instead of cheese to see how that works. Thanks for recipe
