Ingredients
Extra greens version of "hug in a mug" chicken soup
- 100 g Mushroom, cut into quarters
- 2 carrot, cut into quarters
- 1 brown onion, medium - large, cut into quarters
- 1 chilli, bird's eye, fresh
- 1 cloves garlic, large
- 1 zucchini, medium, cut into quarters
- 50 g Butter, cut into pieces
- 2 tsp mixed dried herbs
- 500 g skinless chicken thigh, 2 cm or smaller
- 50 g Flour, Plain, wholemeal
- 1/2 tsp ground black pepper
- 800 g water, boiling / hot
- 1 tbsp chicken stock paste, See TM recipe. Adjust amount to taste, it's salty!
- 250 g frozen spinach leaves
- lemon juice, A big squeeze.

- Place 100 g fresh mushrooms, cut into quarters,
carrot, 1 birdseye chilli, 1 large clove of garlic, 1 zuccini roughly chunked and onion into mixing bowl and chop 7 sec/speed 6.
Scrape down sides of mixing bowl with spatula. - Add butter and sauté 6 min/120°C/speed 2. / varoma
- Add chicken, 2 teaspoons mixed dry herbs, flour and pepper.
Cook 1 min 30 sec/90°C/speed 2. - Add water, frozen spinach chunks, and stock paste and cook 22 min/100°C/speed 1.
Add the splatter guard(TM6) or simmer basket / no MC for this step to let the soup reduce a bit. - Add squeeze of lemming at the end.
Divide soup between mugs (or bowls) and serve with crusty bread.

This is adapted from the highly rated 'hug in a mug' chook soup that I found in RC but am now unable to find! If the original creator drops me a note in comments I can properly credit them
I adapted this for my new TM6, I know TM31 doesn't have the 120 degree setting, so I think use Varoma and adjust the time.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

I absolutely LOVED this recipe!! More so than the original, Hug in a mug!!! Added some additional chilli seasoning and it was just delicious. Thanks for modifying and adding more veggies! Definitely going to have this one on rotation.
