- 1000 grams potatoes, peeled, roughly chopped
- 1 brown onion, halved
- 60 grams plain flour
- 2 eggs
- 1 teaspoon sea salt
- 1/2 teaspoon sugar
- 1 teaspoon baking powder
- Oil to shallow fry

1. Place potatoes into mixing bowl and chop 3-5 seconds/speed 5.
2. Transfer potatoes into simmering basket and press out any excess liquid. Set aside.
3.Place onion into mixing bowl and chop 4 seconds/speed 5. Scrape down sides of bowl.
4.Add all remaining ingredients, including reserved potatoes, and mix 20 seconds/"Counter-clockwise operation" /speed 4.
5.Heat a little oil in a frying pan over a medium high heat. Add a heaped tablespoon of mixture into the oil and gently press down to flatten.
6. Fry on both sides until golden brown.
7. Serve with apple sauce made in your thermomix.

Squeeze out as much liquid from potatoes as possible to create a crispy result.

Delicious - thank you - absolutely the EASIEST latke recipe I have ever made - literally perfect!!! I made them in advance, fried them in Sunflower oil - till nice and golden and crispy - then am re-heating them on a high oven this evening.
these were awesome, brought back some good memories from my childhood. They were simple to make and didn't take to long in the pan. The only suggestion i wouldo make would be to add a small amount of cheese to the mixture, to make them cheesy

Great, yummy & easy recipe.
A quick & super easy recipe. I didn't add garlic as thought the onion was enough & it was. I did add parmesan, which was a good addition, although i also think they needed a little more salt. Could do so much with them by adding few things if you wanting to suit you tastes. They also cook quickly & really nice to add for BBQ's or as a side dish to meats etc. Will be making this often & will be doubling the recipe as they went fast. Thanks for posting.
I added garlic as well. Super yummy. A hit with the whole family.

I added three cloves of chopped garlic and 30grams of grated Parmesan, they were awesome!
