  • 400 grams Almond meal fine
  • 300 grams caster sugar
  • 2 egg whites
  • 1 teaspoon vanilla essence
  • 2 teaspoons almond essence
  • 80 grams icing sugar

Recipe's preparation

    Method
  1. 1. Preheat oven 175 c or 165 fan forced and line trays with baking paper.

    2. Place almond meal in Closed lid"Closed lid" and add caster sugar. Mix on speed 4 for 8 sec.

    3. Add vanilla and almond essences to the meal and mix on speed 4 for  5 sec.

    4. Add egg whites one at a time and mix on speed 4 for 15 sec until the dough becomes a smooth consistency. It will be very sticky!

    5. In a separate bowl place your icing sugar.

    6. Add a teaspoon of almond mixture to the icing sugar and cover. With your hands roll the dough into a ball and place on baking tray.

    7. If you like you can add a glacé cherry or whole almond on top before placing the tray in the oven.

    8. Bake for 12-15 mins or until light golden brown.

    These are absolutely delicious 💕very easy
    They are very similar to the Greek biscuits "amigthalota" I added rose water instead of almond essence
    I have put some in the freezer just to see how good they taste after being frozen

    So good... they don't last long!
    I always add an extra egg white as I find the mixture too dry and they always work out for me.

    These were so easy and really delicious. I didn't have blanched almonds, so used almonds with the skins on and they were fine. My friends loved them and couldn't believe they weren't from a shop - will definiately be making these on a regular basis!

    Yes, you can freeze amaretti easily. They defrost beautifully.. just as when they were made. this recipe is very similar to authentic Italian recipe but now even easier using the Thermo...thanks - Will try these soon!

    I tried these and they are great  tmrc_emoticons.)

    I'm not sure if you can freeze them, but I kept the uncooked mixture in the fridge for a few days and it was fine  tmrc_emoticons.) I guess you could freeze the uncooked mixture without a problem?

    I made them with almonds instead of cherries. I will definately make them again and try a few variations  tmrc_emoticons.)

    I haven't tried as they do not last long in my household!  They do keep in an airtight container.
