  • 160 grams Dark Brown Sugar
  • 1 teaspoon vanilla essence
  • 1 egg
  • 240 grams almond meal
  • 1 1/2 level teaspoons baking powder
  • 90 grams dessicated coconut
  • 120 grams chocolate chips

Recipe's preparation

  1. Place butter, sugar and vanilla essence in bowl and mix on Speed 4 for 40 seconds or until creamy.

  2. Add egg and beat on Speed 4 for 10 seconds.

  3. Add alond flour, coconut and mix on Speed 4 for 20 seconds.

  4. Either add choc chips and mix on Counter-clockwise operation"Counter-clockwise operation" on speed 1 to incorporate choc chips or I prefer to mix through with spatula.

  5. Roll spoonfuls of mixture into balls and place on trays lined with baking paper.  Flatten slightly and bake for 12-15 minutes.  Stand on trays for 2-3 minutes before transferring to a wire rack to transfer completely.

    WARNING: This makes a seriously delicious cookie dough.

    Hi I'm pretty new to this, a novice really, but could you please clear a few things up for me.

    In the Ingrediants you ask for Almond meal however in the directions you ask for Almond flour ( are these the same thing?)

    I couldn't find when to add the the baking powder

    I couldn't find a temp to bake the cookies

    Please can you sort this out for me as these look and sound lovely, I don't want to mess them up

    I made this today with my 2 year old grandson. We used sultanas instead of Choc Chips and it worked really well.

    I probably shouldn't be reviewing this recipe because I amended it so much but I wanted to add my voice and experience. This will be my standard base recipe for biscuits now!!

    Used coconut shavings instead of dessicated and didn't have anywhere near 90g, used a bit of coconut sugar and the remainder just raw sugar to a total of about 70g sugar, carob instead of chocolate chips and had maybe 80g? Vanilla powder instead of essence, same amount.

    Added the baking powder with the almond meal, and cooked for about 20 mins on 180. The bottoms of the biscuits burnt but they're kinda soft and chewy and amazing.

    Delicious!

    i substituted shredded coconut for the descicated - lovely texture.

    Also, added more choc chips - combination of milk & dark. Yum!

    Arrrrggghh! I forgot to add the baking powder to my mixture. It is mentioned in the ingredient list but not in the method. I quickly pulled my biscuits out of the oven and stirred some baking powder through the mixture before rolling into balls again. Hope they work out. Could you please adjust the recipe.
