Bens Paleo Butter Chicken
- 1.5 g chicken thighs, kilos cut in pieces
- 4 cloves garlic, crushed
- 2 teaspoons garam masala
- 2 teaspoons Ground Coriander
- 2 teaspoons ground cumin
- 1/2 teaspoon sweet paprika
- 140 grams yoghurt
- 50 grams Butter
- 2 tablespoons white vinegar
- 410 gram can tomato puree
- 2 tablespoons tomato paste
- 1 tablespoon Vege Stock Concentrate
- 5 bruised caradamon pods
- 1/2 teaspoon ground cinnamon
- 125 grams cream

1. Combine chicken, spices (coriander,Garam Masala, cardamom,basic curry,cinnamon,paprika, cummin) and yoghurt in a large bowl, cover and refrigerate from 2 hours to overnight.
2. Melt butter, in TM bowl.1.30 min, 100 deg.speed 1. Add garlic purée on turbo. Cook butter and garlic for 3 min on 100c speed soft.
3.Add chicken mixture to TM bowl, cook 10 minutes, 100 deg, Reverse speed soft
4.Add remainig ingredients, except cream. Cook 20 minutes,100 deg, Reverse, speed soft
5.Add cream, cook 1 minute,100deg, Reverse, speed 1.
6. Garnish withn coriander and a handful of cashews.
Serve with cauliflower rice.

Have a look at Quirky Cooking dairy free sour creem. I use this instead of cream and sour cream in dishes to make it paleo!
Sour Cream:Soak nuts and seeds overnight in water. Add all ingredients (including soaking water) to Thermomix and blend for 1 minute on speed 9, scrape down sides, blend again until smooth:- 85g (1/2 cup) sunflower seeds- 85g (1/2 cup) pine nuts- 250g (1 cup) filtered water- 1 tsp sea salt- 75g (1/3 cup) fresh lemon juice- 1 small clove garlic, or dash of garlic powder- 1 tsp onion powderIf you want to use this 'sour cream' in sweet dishes, leave out the onion powder and garlic!
