Ingredients

  • 180 grams Whole raw almonds

  • 125 grams sugar
  • pinch sea salt
  • 75 grams Apricots (dried), finely chopped
  • 2 egg whites, size 6

Recipe's preparation

    To Make the dough
  1. Mill 125 gms sugar, 10 secs speed 9. Set aside, clean and dry bowl.

    Place 140 gms almonds into TM bowl.  Mill 20 seconds at spped 9.  Place in seperate bowl set aside

     

    Add 2 egg whites to TM bowl.  Insert butterfly whisk.  Whisk 1 min speed 3.5, until soft peaks form.  Place in clean bowl and set aside.

     

    Clean and dry TM bowl.

     

    Place orange zest from 1 orange, and 125 gms sugar and mill 5 seconds, speed 9. 

     

    Add milled almonds,  Chopped Apricots back to TM bowl.  Combine 5 seconds Counter-clockwise operation"Counter-clockwise operation" speed 3.5.

     

    Add whisked egg whites, and combine 10 seconds 2

     

    To Assemble

     

    Take spoonfuls and drop into caster sugar and roll around to cover.  Then roll in reserved milled icing sugar.

     

    Bake at 160 C for 25 mins until golden brown.

    Not quite sure about this recipe, was excited to give it a try.. but something seems not quite right.. in the pic the biscuits look nice and firm.. mine look more like a flat disc... they taste ok , not sure where i went wrong ?
