- 50 grams unsalted butter
- 145 grams sugar
- 1 egg
- 25 grams unsweetened cocoa powder
- 50 grams Red food colouring
- 1/2 teaspoon vanilla extract
- 125 grams buttermilk
- 190 grams all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons white vinegar

Prehear oven to 180 C
Prepare muffin/cupcake tins with liners
Cream butter and sugar together 20sec/speed 4, scrape down bowl and repeat.
Add egg, mix 20 sec/speed 4, till smooth and well combined.
In a sepearte bowl mix the cocoa and red food colouring to a smooth paste.
Add the paste to the creamed butter and sugar mixture, and mix 20 sec/speed4, till comined.
add the flour and butter milk, and mix 40 sec/speed 5,
Lastly add salt, baking soda and vinegar to bowl and mix 20 sec/speed5, untill all well combined. scrape down sides and mix for further 10 seconds.
Distribute evenly into 12 cupcake pans and bake for 20 minutes, or unitl a skewer comes out clean when placed in the centre.
TIP. I like to decorated these with my Swiss Meringue Butter cream recipe on the Recipe Community. You can flavour this with 3 tablespoons of dutch cocoa. You can pipe swirls onto the cupcakes when cool and decorate with your favorite garnish.

Easter, small easter egg decorations
Xmas, make icing green and use xmas decals for decorating.

Delicious Recipe. Amazing texture. Only problem was recipe listed Vanilla Extract and didn't tell us to add it I got very confused. I didnt add any but still tasted DELICIOUS!
All good except ingredients say vanilla extract and method doesn't add it anywhere. Realized missing as vanilla extract still on bench and cakes are cooking!!
