Ingredients
- 40 grams Butter
- 100 grams brown sugar
- 230 grams ripe bananas, About 3 bananas or 1 cup
- 1 egg
- 250 grams Self Raising Flour
- 1 teaspoon baking powder
- 2 tablespoon Milk
- 50 grams desicated coconut
Topping
- 1 tablespoon sugar
- 1 teaspoon ground cinammon

- Prehead oven to 180 Celcius. Grease and line base of a loaf tin.
1. Place butter, sugar, egg and banana in TM bowl and mix on speed 5 for 10 seconds then scrape down sides.
2. Add flour, baking powder, coconut and milk and mix on speed 5 for 4 seconds or until combined. Pour mix into loaf tin.
3. Mix topping ingredients and sprinkle over the top of the top.
4. Bake for 40-45 minutes or until golden brown

Soy milk substitued for dairy milk.
Great taste, I did add 1 tsp each of allspice and cinnamon to the mix because I love it spicy.

Banana coconut bread was nice!
I Used:
60g butter
90g brown sugar
360g very ripe bananas
1 egg
260g SF flour
1 teaspoon baking powder
20g desiccated coconut (didn't have 50)
thus added a handful of frozen blueberries at the END
2T dry chia seeds
1T cottage cheese solids (didn't have milk, and 360g bananas was quite a lot over the specified 230g or even other users' 310g)
Did not bother with topping
Cake was lovely. Batter really tasted too sweet but final product was only mildly sweet. Not so coconutty as I would like but then I only had 20g coconut. Could not detect chia seeds as the desiccated coconut already gave some "chew" to the cake texture
next time will try reducing sugar to 80g

That is delicious! Just got it straight out of the oven for a slice & so fluffy & yum. Also reduced the sugar to about 120g and used Coconut & brown sugar.
