Ingredients
Banana Flaxmeal Muffins
- 180 g plain flour
- 90 g Flaxmeal
- 180 g Rice malt syrup
- 1 level tsp baking powder
- 0.5 level tsp bicarbonate of soda
- 0.5 level tsp salt
- 2 eggs
- 75 g coconut oil
- 2-3 medium very ripe bananas
- 20 g almond meal

- Preheat oven to 180degrees
- Grease a 12 hole muffin tray
- Add 180g plain flour
- Add 90g flaxmeal (see tips)
- Add 1tsp baking powder
- Add 1/2 tsp bicarbonate of soda
- Add 1/2 tsp salt
- Mix for 10 seconds on speed 4
- Place dry mixture into a separate bowl and set aside
- Add 2-3 medium very ripe bananas
- Add 2 eggs
- Add 180g rice malt syrup
- Add 75g coconut oil
- Mix for 5 seconds on speed 7
- Add reserved dry mixture
- Mix for 10 seconds on speed 5
- Divide mixture between 12 hole muffin tray, sprinkle tops with almond meal and bake for 20-25 minutes (see tips)
Tip
To make your own flaxmeal or almond meal, before step 1 place 100-250g flaxseeds or almonds into mixing bowl and mill for 10 seconds speed 7. Use required amount for the recipe and store the remaining amount in an air-tight container.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
