I started making a double batch of this tonight, but didn’t realise I only had half the milk powder I needed. I was desperate, so I decided to continue with the recipe with only half the milk powder and half the water and it still worked out great. I used the mixture to fill some semi-cooked tart bases, so I cooked them in the oven for 5-10 minutes on 180 degrees to finish them off. The were yum!
Best Caramel tart filling ever!! I made 2 others today experimenting and the orthers seamed a bit grainy but this one was the best by far!! no more boiling tins of condenced milk for me any more!! Thanks
Followed recipe exactly, however used room temp butter.
Perfect perfect perfect. My top'n'fill loving hubby said best caramel ever and was way too easy to make!!
This was amazing!
I just made this exactly as directed and it was an epic fail!! Maybe there's a difference between cooking it in a TM5 and a 31? My TM5 jumped all over the place for most of the cooking time, then with 3 minutes to go I heard it change texture so I checked it and it was nearly a solid, grainy mass. The sugar hadn't dissolved properly and the butterfly whisk is firmly stuck!! I have boiling water in the bowl now to try and melt it enough so I can get the butterfly whisk out and throw the "caramel" in the bin. Sorry, but this didnt work for me at all. Ive made many batches of caramel fudge from TM31 recipes on this site that have worked perfectly so i'm not sure what happened here.
It was my first time making caramel tarts, this was so easy to make and turned out great. It was a big hit with everyone, I can see me making this often.
