- 120 g almonds
- 200 g carrots, cut into chunks
- 150 g honey, or sweetener of choice
- 2 eggs
- 50 g plain flour
- 2 teaspoon baking powder

Preheat oven to 180 degrees.
Process almonds sp5.5/10sec, then set aside. (I aim for small pieces rather than almond meal, to add texture to the cake)
Grate carrots sp5/15sec.
Add almonds and remaining ingredients in with the grated carrots. Mix sp3/15sec.
Pour batter into greased cake tin. Note: this makes a fairly small cake; I use a loaf tin. Bake in moderate oven ~40min, until inserted skewer comes out clean.
Tip
Great for lunchboxes if your school is not nut free. Freezes and defrosts well.

Awesome cake, I used the almond and carrot and threw a large handfull of dates in so cut back on the honey to 50 grams

Delish, and super easy! I did 50g honey, 50g rice malt syrup and it is sweet enough, I might even do a little less next time! My one year old loves it too
This is delicious, thanks for the recipe! I love the crunch in the texture, and I added 10g less of the honey (ran out) but it's sweet enough so I may try with even less honey next time. Definitely will be making again because it's so simple and easy to make!
