Cherry Ripe Slice (gluten & dairy free)
BASE
- 160 grams Gluten Free Scotch FInger Biscuits, I use the free from gluten brand from Woolworths
- 70 grams Coconut oil OR Nuttelex
CHERRY RIPE LAYER
- 100 grams coconut oil
- 320 grams Coconut condensed milk
- 200 grams dessicated coconut
- 150 grams glace cherries
- 3 drops pink food colouring
CHOCOLATE LAYER
- 200 grams dark chocolate, (I use the green & black brand as it's soy free as well)

- Add coconut oil (or nuttelex) to the bowl and melt 1min/80°/speed 2.
- Add biscuits and blitz on turbo 2 times or until it forms a fine crumb.
- Pour into a lined slice tin, spread out and press firmly to form the base. Put in the fridge to set and clean.and dry mixing bowl.
- Add coconut oil to the bowl and melt 1min/50°/speed 1.
- Add coconut condensed milk and a few drops of pink colouring and mix 15sec/speed 3.
- Add desiccated coconut and roughly chopped cherries and mix 10sec/speed 3/reverse or until combined.
- Gently spread over the base and return to fridge. Clean and dry mixing bowl.
- Add chocolate to bowl in rough pieces and blitz on turbo 2 or 3 times until finely chopped.
- Melt 4min/50°/speed 2 and spread over the slice. Return to fridge until set.
- Cut into squares working quickly.
Best eaten straight from the fridge!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
