Ingredients
Doughnuts
- 45 g Nuttelex
- 300 g rice milk
- 1 egg
- 1 tsp Vanilla Bean Paste
- 300 g gluten free flour, (I use my GF all purpose flour blend)
- 2.5 tsp Baking Powder, gluten free
- 130 g caster sugar
- 1 pinch salt
Glaze
- 200 g icing sugar
- 2-3 tablespoons rice milk
- 1/2 tsp Vanilla Bean Paste
- 1 drop Natural food colouring

I'm cooking this todayRecipe's preparation
- Add nuttelex to the bowl and melt 1min/100°/speed 1.
- Add rice milk, egg and vanilla paste. Mix 10sec/speed 4.
- Add gluten free flour, baking powder, sugar and salt and mix 10 sec/speed 5.
- Scrape down sides and mix 5 sec/speed 5.
- Rest mixture for 10-20min before pouring or piping into a well oiled doughnut pan.
Bake 10-12 minutes at 180°c. - Add icing sugar, rice milk, vanilla and colour to bowl. Insert butterfly whisk and beat 20sec/speed 4.
You may need to add a little extra milk or sugar to get the right consistency to glaze the doughnuts. - Dip and swirl doughnuts upside down in glaze and place on tray. Decorate with sprinkles if desired.

Tip
You may be able to pour the mixture into the doughnut trays or pipe using a piping bag, depending on the type of GF flour used or dairy free milk.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
