Ingredients
Base:
- 210 g almonds
- 40 g Flaxseeds or Pecans
- 90 g Pitted medjool dates, (plus 1/2 extra if required)
- 1/2 cup cube peanuts, (dry roasted, optional)
Caramel:
- 50 g Organic Peanut Butter
- 75 g tahini
- 50 g coconut oil, melted & cooled
- 1 pinch sea salt, (big pinch)
Chocolate Topping:
- 100 g coconut oil, melted & cooled
- 100 g Rice malt syrup
- 15 g Raw Cacao

1.Melt the coconut oil so that it has time to cool.
2. Line a square cake tin with baking paper.
3. Add almonds, flaxseeds/pecans, and dates into the TM. Blend for approx 10 seconds on speed 6 until it resembles coarse breadcrumbs but the mixture will come together (add an extra date or 2 if necessary).
4. Press the mixture into the tin so you have a firm even layer.
5. Scatter the peanuts over the top of the base and press them in so they are sitting into the mix. Put to the side & give the jug a quick clean.
Ensure that the melted coconut oil is cool to avoid the mixture from splitting.
6.Place all of the caramel ingredients into the jug and blitz until combined (approx: 10 seconds on speed 5).
7. Pour the caramel mix over the base. Ensure the whole base is covered with the caramel mixture and set aside again. Clean the jug.
8. Place all of the chocolate topping ingredients into the jug and blitz until combined (approx: 10 seconds on speed 5).
9. Pour over the caramel mix and ensure all of the caramel is covered.
10. Put into the freezer to set for an hour.
11. Cut into squares using a sharp knife. They can be eaten straight from the freezer.
