Line a square 20cm (base measurement) pan with non-stick baking paper, allowing it to overhang the sides.
Add sugar to the TM and mill for 10 secs / speed 9
Combine the cream of tartar, coconut and condensed milk. Mix well for 6 secs speed 6
Only remove about half of the coconut mixture into the prepared pan. Press half the coconut mixture over the base of the prepared pan. (use the MC over a piece of baking paper)
Add the food colouring to the remaining coconut mixture and mix on speed 6 until well combined and evenly coloured.
Spread the pink coconut mixture over the mixture in the pan and smooth the surface, again using the MC over a piece of baking paper.
Cover with plastic wrap and place in the fridge for 1 hour or until set. (it's almost set anyway when you place in the fridge so you can cut into squares before it goes in)

This Coconut Ice recipe is seriously dangerous because…it's very difficult to resist! Coconut Ice is quick and easy to make and it’s perfect to give someone as a gift too – wrap it up nicely and voila!
