Ingredients

Lemon Slice

  • 140 g caster sugar
  • 160 g plain flour
  • 15 g Desiccated Coconut
  • 100 g Butter
  • 1 tbsp Milk

Meringue & Coconut Topping

  • 4 egg whites, Room Temperature
  • 100 g castor sugar
  • 100 g Desiccated Coconut
  • 250 g Lemon curd

Recipe's preparation

    Lemon Slice
  1. Heat the oven to 180 degrees

    Grease a brownie size baking tin

    Add butter, sugar and milk and mix for 30 secs / speed 3

    Add the rest of the ingredients & beat well until combined for 1 min / speed 5

    Pour into the greased tin & set aside

  2. Meringue & Coconut Topping
  3. Make sure the bowl is washed and dried thoroughly

    Add the egg whites and beat for 3 mins / 50 degrees, speed 3.5

    Set the timer on 2 mins & start to add through the hole in the lid, the castor sugar & cream of tartar until it's finished

    The meringue should be thick & glossy

    Add the coconut and mix for 10 secs, speed 3

     

  4. Combine
  5. Cover the lemon slice with lemon curd and then spoon the meringue & coconut topping over the lemon slice & bake until golden brown (about 30 - 40 mins)

    Looks Fantastic!

    I have just made this and it looks and smells amazing....can't wait for it to cool down a little to try it.

    There was no mention of how much cream of tartar to use, so I just looked up another meringue recipe and worked it out from that.  Mine only needed about 25mins in fan forced oven. Hope it tastes as good as it looks.
