- 45 g Coconut, 1/2 cup
- 125 g Butter, cubed room temp
- 60 g castor sugar
- 200 g Self Raising Flour
Topping
- 45 g Coconut
- 140 g icing sugar
- 30 g Butter
- 75 g condensed milk
- 10 g Coconu, For top of slice

Line and grease 19 x 29cm Lamington Pan.
Preheat the oven at 180 degrees conventional.
Place Coconut in a smalll heavy base saucepan, stiring constantly over a meadum heat until lightly Browned, leave to cool.
Place butter and castor sugar in bowl and mix on speed 5 for 20 seconds. Scrape down sides.
Add S.R. Flour and mix speed 5 for 10 seconds. Pour out onto the prepared lamington tray and pat down with mc covered in baking paper.
Add butter to bowl and melt on 80 degrees for 1 minute speed 1.
Add condensed milk, Icing sugar and mix on speed 4 for 10 seconds. Scrape down sides
Add coconut and mix speed 4 for a futher 10 seconds.
