Ingredients
Yorkshire Parkin (Gingerbread slice)
Dry ingredients
- 100 g rolled oats
- 200 g flour, cake, Self raising
- 6 g bicarbonate of soda, 1 tsp
- 3 g mixed spice, 1/2 tsp
- 6 g ground ginger, 1 tsp
Wet ingredient mix
- 100 g Butter, Cubed
- 150 g golden syrup
- 150 g treacle, Or molasses
Additional ingredients
- 1 egg, For dairy free replace with 1 mashed banana
- 50 g full cream milk
- 1/4 cup candied/crystallisedginger, Optional. Can replace with 1tsp ginger powder added to dry ingredients
- 3 pears
- 4 Fresh figs

- Add the dry ingredients to your Thermomix bowl.
Lid on with measuring cup
Turbo for 2 seconds
Empty dry ingredients into a medium mixing bowl
(No need to wash the TM bowl) - Heat wet ingredient mix:
Add butter, golden syrup, treacle to the bowl.
Place lid and measuring cup on.
Heat 2-4 mins, 95 deg, speed 1 or until warm and mixed.
DO NOT BOIL
Set aside to cool for 5 mins.
Pre-heat oven to 170 c
Chop figs into quarters
Chop pears into chunks/slices
Line an 11" X 9.5" square baking tin or similar with baking paper - Pour hot mixture into dry ingredients and stir until combined.
Add beaten egg, milk, pears and figs (reserving some for decoration on top) and crystallised ginger (optional).
Stir until combined.
Pour cake mixture into prepared baking tin and place in the oven. Decorate top with figs and pears.
Bake for 40-45 minutes, or until a toothpick comes out clean from centre.
Allow to cool. Serve with ice crea, custard or with a coffee
Place in an airtight container and wait for 3 days to fully develop flavour and texture (if you can wait that long!)
Preheat Fan forced oven to 170 deg
Tip
You can use just golden syrup, instead of addition of treacle.
Crystallised/candied ginger chopped, can be substituted with 1 tsp of ginger powder.
A delightfully chewy, sticky gingerbread type slice, with robust flavours that improve with time!

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
