Ingredients

Base

  • 40 g medjool dates, pitted
  • 240 g coconut, desiccated
  • 80 g Coconut Oil, in liquid form
  • 150 g cashew nuts, raw
  • 1 tsp Vanilla Bean Paste
  • 1 tbsp water
  • 1 pinch salt

Chocolate Topping

  • 100 g Cacao Butter, softened, cut into pieces
  • 30 g cacao powder
  • 1 pinch salt
  • 80 g Maple syrup

Recipe's preparation

    Base
  1. Place all the ingredients for the base into the mixing bowl, pulse until combined (2-3 times at 2 seconds), do not over blend, the mixture should be slightly sticky

    Line a 20x20 cm tin with greaseproof paper. Spoon the mixture into the tin and spread it out evenly. Place in freezer for about 10 minutes.

    Clean and dry the mixing bowl.

     

  2. Chocolate Topping
  3. Insert Butterfly Whisk. Place all the ingredients for the topping into the mixing bowl and mix 3 min/speed 3.

    Spread over the chilled base, then set for 10 minutes in the fridge

Tip

Can use normal butter if not dairy free.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
