- 140 g Butter
- 120 g raw sugar
- 80 g Coconut
- 200 g plain flour
TOPPING
- 120 g Coconut
- 100 g raw sugar
- 1 egg
FILLING
- Good Quality Raspberry Jam

I'm cooking this todayRecipe's preparation
Preheat oven to 180 degrees
Add butter and sugar to TM - mix 5 Secs Speed 5
Add in coconut and flour and mix a further
Mix Speed 8 for 20 secs
Pat mixture into Slice Tin and flatten down with fingers
Bake for 15 mins til golden
Allow to cool slightly and cover base generously with good quality Raspberry Jam
Add to TM coconut, egg & sugar
Mix for 10 secs Speed 5
Sprinkle over jam layer
Bake for a further 10-15 mins til golden on top

Tip
Any other jam can be substituted in this recipe

Was really nice, but the dough only needs to be cooked for 10 mins, I found the base a bit hard.

Charmaine63:hi Charmaine yes you can freeze this slice I think it actually tastes a touch better after freezing the pastry is a bit more firm.
I am also interested to know if this freezes well if anyone knows please?
