Ingredients

  • 125 g Milk, Any type, I used Rice
  • 2 Eggs, Large
  • 40 g Rapadura Sugar
  • 1 cup Feijoa Pulp
  • 1 tsp Vanilla extract, Essence is also fine
  • 75 g butter
  • 260 g White Spelt Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Allspice

Recipe's preparation

  1. Preheat Oven to 180 degrees and grease a 20cm cake tin.


     

  2. Scoop out pulp from the middle of the feijoas and place into bowl with butter, milk, eggs, sugar and vanilla.   Mix, speed 4/10 secs.


     

  3. Sift flour and dry ingredients into bowl and mix speed 5/20 secs.  Scrape down and repeat if required.


     

  4. Pour mixture into prepared tin and bake for 40-45 mins, until cooked through.

Tip

This cake is a perfect texture, soft on the inside with a slight crunch to the outside.

Perfect for those that love Feijoas, like my Kiwi husband who  misses his Feijoas here in Melbourne.

    A good cake. Great way to use up our feijoa's (we have 13 bushes!). Next time I will not add the salt, as I find the cake just a tad too salty (but I did use salted butter, maybe If I had of used unsalted butter it would have been fine). I used wholemeal plain flour as I didn't have spelt. Mine rose fine. Slightly crunchy on the outside, moist on the inside. tmrc_emoticons.)

    I don't have access to Feijoa's.  Could you recommend another fruit?

    We have a feijoa tree so I thought I'd give this cake a go.  I'm new to cooking cakes so I'm not quite sure why it's come out very flat. Taste wise it's got a lovely light feijoa flavour so worth another attempt!
