  • 85 g Rapadura Sugar
  • 1 teaspoon vanilla
  • 110 g oil
  • 220 g plain four
  • 1 1/2 teaspoon baking powder

Recipe's preparation

  1. Pre-heat oven to 190C.

    2.  Place yoghurt, eggs, sugar, vanilla and oil into mixing bowl and combine 15 sec/speed 4.  Scrape down the sides of mixing bowl.

    3.  Add flour and baking powder and mix again 10 sec/speed 5.

    4.  Pour into a greased round cake tin and bake for 35-40 minutes.  I used a bunt tin which took 30 minutes.

     

Tip

This is an original recipe from my French pen pal that I received 20 odd years ago. This is apparently one of the first cakes children learn to cook in France. Please give it ago, you'll be pleasantly surprised.

You can also use a fruity yoghurt and cut back on the sugar, or add frozen berries or choc chips. I like it plain with a sprinkle of icing sugar and maybe a dollop of crème fraîche.

    Really delicious and very moist. I added a few berries, but wasn't really necessary. I used white sugar, but kept all quantities the same. Great recipe, thanks. I can see it would be perfect with any seasonal fruit.

    Really sorry, I haven't signed in in a long time and only just saw your question.  I use olive oil or melted coconut oil.  I used to use grape seed. But macadamia would be nice.

    Lovely, versatile cake.  I played around with flavours (apricot jam) and sweetening (reduced amounts) and cooked it as muffins (160 degree fan forced for 20 minutes) and all worked well.  I think that the trick is just to get the consistency correct so when I added a more liquid flavouring I increased the flour.  I used grapeseed oil.  Thank you for the recipe.

    What type of oil do you use? I used EVOO and the flavour of it came through.
