GF Cookies (Eggless)
- 250 g Butter
- 200 g Rapadura Sugar, approx 1 cup
- 460 g gluten free flour, plain
- 2 teaspoons baking powder
- 2 tablespoons water
- 4 tablespoons oil, rice bran, or other oil
- 2 tablespoons vanilla extract
- dark chocolate chips

- Add butter and sugar to bowl and mix on speed 4 until creamy.
Add flour and baking powder and mix on speed 3 for 10 seconds.
Add water, oil and vanilla and mix until combined.
Add chocolate chips or other add in, spoon onto baking sheet and bake for approx. 10 mins on 180 degrees.
Alternatively, create log shape in baking paper, wrap and twist ends and place in the freezer to be defrosted, sliced and baked at a later date.
