Gluten & Dairy Free Vanilla Cake
- 3 large eggs
- 150 g raw sugar
- 50 g honey
- 360 g almond meal
- 120 g self raising flour, gluten free
- 50 g Desiccated Coconut
- 3 tsp Baking Powder, gluten free
- 1 and a half cups almond milk (or similar substitute)
- 3 tsp vanilla extract
- Half cup Grapeseed Oil

- Line a 22cm round cake tin with baking paper (base and sides). Preheat oven to 170ºC (fan-forced).
- Insert the Butterfly whisk into your TM, add eggs and caster sugar to your bowl. Beat for 30 seconds on speed 3. Scrape down the sides with spatula.
- Add the remaining ingredients (honey, almond meal, flour, desiccated coconut, baking powder, milk, vanilla and oil) and beat for 20 seconds on speed 3 - just until the batter is smooth and creamy - refrain from overbeating! Scrape down the sides with spatula and mix a bit longer of necessary.
- Pour batter into prepared baking tin and bake for 50 minutes or until cooked through. Keep checking from 40 minutes as each oven is different.
- Allow to cool slightly before removing cake from tin onto a cooling rack.
- Serve warm with strawberry jam, freshly whipped cream and freshly made coffee or tea. Yum!!!!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
