Ingredients

Gluten free banana bread

  • 4 teaspoon baking powder
  • 2 eggs
  • 500 grams All purpose gluten free flour
  • 1 teaspoon cinnamon
  • 1 tablespoon Rice malt syrup, Or a different sugar if preffered
  • 1 teaspoon xanthum gum
  • 5-6 peeled bananas

Recipe's preparation

  1. 1. Turn on oven to preheat at 180.

    2. add broken up pieces of peeled banana into bowl (I use 5-6 bananas depending on what I have to use up) then process on speend 6 for 5 seconds or until as chunky or smooth as you like.

    3. Scrape down sides and add the rest of the ingredients, lid back on and combine for 15 seconds on reverse at speed 4. Scrape down sides and repeat for 15 seconds at speed 4 on reverse until all combined. 

    4. Grease a loaf tin and bake at 180 for approx 30 mins but depending on your tin it may be 20-40 minutes. Skewer will come out clean when cooked.

Tip

Depending on what we have in the cupboard I also add a couple of spoons of chia seeds to this and for a chocolate version a couple of spoons of cacao.
